Summer Berry Yogurt Pops

Beat the heat with this treat using whatever berries you may be harvesting this summer season; simple and easy for both kids and adults to whip up! We used some frozen strawberries from our June pickings and fresh blueberries we just had harvested a week ago to make some scrumptious pops that hit the spot on these hot and humid afternoons.


Ingredients

  • berries (fresh or frozen)

  • vanilla yogurt

  • little bit of water if using frozen berries

Supplies

  • blender or food processor

  • molds (read below for DIY ideas)

  • popsicle sticks (alternative idea below)

What to do

In a blender, combine washed fresh or frozen berries and some of your favorite vanilla yogurt. We don’t measure, but prefer our ratios to be around 2/3 part berries to 1/3 yogurt. I added a smidgen of water as well to help with the blending consistency since we used some frozen strawberries. Blend until smooth and then pour into molds — we invested in a stainless steel popsicle mold kit from ecozoi a couple of years ago since this has become a fairly frequent summertime tradition, but you could easily DIY some molds using a muffin tin, ice cube tray, small cups, or even reuse small yogurt containers, etc. If you can’t locate popsicle sticks, in a pinch you could use a smaller spoons — I used to do this as a child and make frozen tea pops in a taller narrow cup filling the bottom and just leaving the spoon in supported up by the sides. Freeze until solid, which is usually around 4-8 hours. Once completely frozen and you’re ready to eat, partially submerge the frozen molds in some warm water for a few seconds or so then to help for an easy removal of popsicles.
